A delicious recipe combining juicy pork shoulder and sweet grilled apricots. Perfect for summer grilling!
Preparation time: 1 hour
Serving size: 4
Ingredients:
- 1 kg pork shoulder
- 2 yellow bell peppers
- 2 red bell peppers
Marinade:
- 100 ml cooking oil
- 1 tbsp paprika powder
- 1 tsp ground cumin
- 1 tsp ground fennel
- 1 tsp ground black pepper
- 2 tsp fine sea salt
- Zest of 1 lemon
- Juice of 1 lemon
Grilled Apricots:
- 8 fresh apricots
- 1 tbsp honey
- 1 tbsp olive oil
Instructions:
1. Begin by making the marinade. In a bowl, mix all the marinade ingredients together.
2. Cut the pork shoulder into cubes and add them to the marinade. Let marinate for at least 30 minutes.
3. Slice the bell peppers into quarters.
4. Prepare the skewers: alternate marinated pork cubes and bell pepper pieces on the skewers.
5. Grill the skewers over medium heat for about 10-15 minutes, until the meat is cooked through and has a nice char.
6. At the same time, grill the apricots brushed with honey and olive oil for about 5-7 minutes, until they are soft and have a beautiful color.
7. Serve the pork and pepper skewers with the grilled apricots.
