A refreshing summer salad that combines crispy bacon, steamed cauliflower, and a light citrus vinaigrette. Easy and quick to prepare, perfect as a side dish or main course.

Ingredients:

- 1 cauliflower
- 5 slices of American bacon
- 1 head of iceberg lettuce
- ½ cup roasted sunflower seeds
- (Optional: olives to taste)

Citrus Vinaigrette:

- 2 tablespoons lemon juice
- ½ cup olive oil
- 1 teaspoon liquid honey
- A few cracks of black pepper
- A pinch of salt

Instructions:

1. Prepare the citrus vinaigrette by combining lemon juice, olive oil, honey, black pepper, and salt in a small bowl.
2. Cut the cauliflower into small florets and steam until almost tender.
3. Chop the bacon and cook it in a skillet without additional fat until crispy.
4. In a large bowl, combine iceberg lettuce, olives, sunflower seeds, steamed cauliflower, and crispy bacon.
5. Drizzle the citrus vinaigrette over the salad and toss well to combine.
6. Serve alongside grilled chicken breasts and halloumi, if desired.
