Ingredients:

- 1 generous handful of Red Russian kale
- 1 tomato
- 10-12 good olives
- Parmesan cheese (to taste)
- 1 tsp balsamic vinegar
- 2 tsp olive oil
- A pinch of salt
- 2 pinches of sugar
- Smoked fish (optional, for serving)

Instructions:

1. Rinse and chop the kale into small pieces.
2. Dice the tomato and slice the olives.
3. Combine the kale, tomato, and olives in a large bowl.
4. Grate Parmesan cheese over the salad to your liking.
5. Prepare the dressing by mixing balsamic vinegar, olive oil, salt, and sugar together. Mix well.
6. Pour the dressing over the salad and toss gently.
7. Serve the salad topped with smoked fish on a slice of dark bread, if desired.
