Potato Pockets with Cold Smoked Salmon

Delicious potato pockets that combine boiled potatoes and cold smoked salmon perfectly. Great as an appetizer or a light meal.

Ingredients:
- 8 boiled potatoes (use more new potatoes if desired)
- 200 g cold smoked salmon, thinly sliced
- 200 g (about 3/4 package) Koskenlaskija traditional cream cheese
- 2 red onions
- Black pepper to taste
- A bunch of chives for garnish
Instructions:
1. Tear off four generous pieces of aluminum foil. You can place baking paper on the foil to help keep the pockets intact.
2. Arrange sliced potatoes on the foil.
3. Place cold smoked salmon on top of the potatoes.
4. Add slices of Koskenlaskija cream cheese.
5. Slice the red onions and add them on top of the pockets.
6. Season with black pepper to taste.
7. Wrap the foil into pockets and place them on the grill or in an oven preheated to 200°C (390°F) for about 15-20 minutes.
8. Remove the pockets from the grill/oven and garnish with chopped chives before serving.
