This delightful summer tomato pie features fresh tomatoes and basil, combined with a creamy filling and topped with cheese, perfect for a light meal or appetizer.
Ingredients:
- 1 ready-made pie crust
- 4-5 ripe tomatoes
- 1 cup fresh basil
- 1 cup heavy cream
- 2 eggs
- 150 g grated cheese (e.g., mozzarella or feta)
- Salt and pepper to taste
- Olive oil for greasing
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Grease a pie dish with olive oil and roll out the ready-made pie crust into the dish.
3. Slice the tomatoes into thin rounds and arrange them on top of the pie crust.
4. Chop the fresh basil and sprinkle it over the tomato slices.
5. In a bowl, crack the eggs, add the heavy cream, salt, and pepper. Mix well.
6. Pour the egg mixture over the tomatoes and basil.
7. Sprinkle the grated cheese on top of the pie.
8. Bake in the oven for about 30-35 minutes, until golden brown.
9. Allow to cool for a moment before serving. Enjoy warm or cold.
