Summer Herring Salad

Ingredients:
- 300 g herring (pickled or store-bought)
- 1 cucumber
- 2 tomatoes
- 1 red onion
- 1 bell pepper (green or red)
- 100 g peas (fresh or frozen)
- 1 dl yogurt
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh herbs (e.g., dill or parsley)
Instructions:
1. Rinse and chop the cucumber, tomatoes, red onion, and bell pepper into small pieces.
2. If using frozen peas, cook them and drain.
3. Combine all the vegetables and peas in a large bowl.
4. Add the chopped herring to the vegetable mixture.
5. In a separate bowl, mix the yogurt and lemon juice. Season with salt and pepper.
6. Pour the dressing over the salad and mix well.
7. Garnish with fresh herbs and serve immediately.
