Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 400 g chicken breast, diced
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g fresh mushrooms, sliced
- 250 ml cream
- 100 g parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little cooking water.
2. Heat olive oil in a large pan over medium heat. Add chopped onion and crushed garlic, sauté until soft.
3. Add the diced chicken to the pan and cook until golden brown and cooked through, about 5-7 minutes. Season with salt and pepper.
4. Add the bell pepper and mushrooms to the pan, cooking for another 5 minutes until the vegetables are tender.
5. Pour the cream into the pan and mix well. Allow to simmer on low heat for a few minutes until the sauce thickens slightly.
6. Add the cooked pasta to the pan and mix thoroughly. If needed, add a bit of reserved cooking water to reach desired consistency.
7. Grate parmesan cheese over the pasta and stir to combine. Garnish with fresh basil before serving.
