Ingredients:
- 200 g couscous
- 2.5 dl water
- 1 tsp salt
- 1 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 1 dl cherry tomatoes
- 100 g feta cheese
- 1 dl olive oil
- 2 tbsp lemon juice
- 1 dl fresh herbs (e.g., basil, parsley)
- Pepper to taste
Instructions:
1. Boil the water and add salt. Pour couscous into the pot and stir. Cover with a lid and let it steam for about 5 minutes.
2. Chop the cucumber, bell peppers, and cherry tomatoes into small pieces.
3. In a large bowl, mix the cooked couscous, chopped vegetables, crumbled feta cheese, and fresh herbs.
4. Prepare the dressing by mixing olive oil and lemon juice. Pour the dressing over the salad and mix well.
5. Season with pepper and serve immediately, or let the flavors meld in the refrigerator before serving.
