Delicious muffins perfect for summer picnics or as a snack.
Preparation Time: 30 minutes
Serving Size: Makes about 12 muffins
Ingredients:
- 6 dl all-purpose flour
- 2 dl wheat bran
- 1½ tsp baking powder
- 2 tsp baking soda
- 1 tbsp thyme
- 2 tsp salt
- ¾ dl oil
- 4 dl milk
- 2 eggs
- 1 dl grated cheese (optional)
Instructions:
1. Preheat the oven to 200°C (390°F). Grease a muffin pan or use muffin liners.
2. In a large bowl, mix together the flour, wheat bran, baking powder, baking soda, thyme, and salt.
3. In another bowl, combine the oil, milk, and eggs. Pour this mixture into the dry ingredients and stir quickly to form a smooth batter. Add grated cheese if using.
4. Divide the batter among the muffin cups, filling them about 2/3 full.
5. Bake in the middle of the oven for about 20-25 minutes, or until the muffins are golden brown and cooked through. Check doneness with a toothpick.
6. Allow the muffins to cool slightly before serving.
