A flavorful and nutritious option that’s perfect as a side dish or main course. Preparation time: 30 minutes. Serving size: 6 patties.
Ingredients:
- 2 dl cooked chickpeas
- 1 dl rolled oats
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- 1/2 dl parsley, finely chopped
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 2 tbsp olive oil for frying
Instructions:
1. Mash the chickpeas and rolled oats in a bowl until the mixture is fairly smooth.
2. Add the chopped onion, crushed garlic, grated carrot, parsley, lemon juice, salt, black pepper, and paprika powder. Mix well.
3. Shape the mixture into evenly sized patties.
4. Heat the olive oil in a frying pan over medium heat.
5. Fry the patties for about 4-5 minutes on each side until golden brown.
6. Serve warm with salad or sauce.
