Delicious yellow fritters made quickly from sweet potatoes and regular potatoes. They pair excellently with smoky fish spread. Preparation Time: 30 minutes

Ingredients:
- 2 medium sweet potatoes
- 2 medium potatoes
- 1 egg
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Oil for frying
Instructions:
1. Peel and grate the sweet potatoes and potatoes finely.
2. Squeeze out excess moisture from the grated vegetables.
3. In a bowl, mix the grated sweet potato and potato, egg, flour, baking powder, salt, and black pepper until well combined.
4. Heat oil in a skillet over medium heat.
5. Scoop small portions of the batter onto the skillet and shape them into round fritters.
6. Fry the fritters for about 3-4 minutes on each side or until golden brown.
7. Place the fritters on paper towels to drain excess oil and repeat until all the batter is used.
8. Serve warm with smoky fish spread.
