Delicious shrimp and ginger gyoza, perfect as an appetizer. These bite-sized dumplings are filled with a flavorful mixture and can be frozen for later use. Preparation time: 1 hour 30 minutes
Serving size: 24 gyoza
Ingredients
- Filling:- 500 g Napa cabbage
- 1 tsp salt
- 3 green onions
- 2 small garlic cloves (or 1 large), grated
- 3 tbsp grated ginger
- A splash of canola oil
- 1.5 tsp sugar
- 1.5 tbsp soy sauce
- 1.5 tbsp sake
- 3 tbsp water
- 1.5 tsp sesame oil
- 1.5 tbsp cornstarch
- 180 g peeled thawed shrimp
- Dough:
- 300 g all-purpose flour
- 0.5 tbsp salt
- 150-200 ml water
Instructions
1. Prepare the filling: Rinse the Napa cabbage, slice it thinly, and place it in a bowl. Add salt and let it rest for 30 minutes while you prepare the dough.2. Sauté: Slice the green onions into thin rings. Peel and grate the ginger and garlic. Squeeze excess moisture from the Napa cabbage and sauté the green onions, ginger, and garlic in a little oil for a few minutes. Add the Napa cabbage and sauté for a few more minutes.
3. Make the sauce: In a bowl, mix sugar, soy sauce, sake, sesame oil, water, and cornstarch. Chop the thawed shrimp into smaller pieces and add them to the pan with the sauce mixture. Stir well and cook for a moment. Set aside to cool.
4. Make the dough: Boil water, add salt, and mix with the all-purpose flour. Knead the mixture into a firm ball and let it rest for half an hour.
5. Shape the gyoza: Divide the dough into two parts and roll each into a ball. Roll each ball into a round shape about 10 cm in diameter. Place about a teaspoon of filling in the center, wet the edges with water, fold, and pinch to seal.
6. Cook: Boil the gyoza in salted water for 4-5 minutes until they float to the surface. Place them on a kitchen towel while waiting to fry.
7. Fry: Heat a splash of canola oil in a pan and fry the gyoza until the bottoms are crispy and golden brown. Serve immediately with sweet chili sauce.
