Ingredients:

- 2 potatoes
- 2 carrots
- 1 bell pepper
- 1 zucchini
- 1 red onion
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano

Yogurt Sauce:

- 200 ml yogurt
- 1 tablespoon lemon juice
- 1 garlic clove, crushed
- Salt and pepper to taste
- Fresh parsley, chopped (optional)

Instructions:

1. Peel and chop the potatoes, carrots, bell pepper, zucchini, and red onion.
2. Place the vegetables on a baking sheet and drizzle with olive oil, salt, pepper, thyme, and oregano. Mix well.
3. Roast the vegetables in a preheated oven at 200°C (392°F) for about 25-30 minutes or until they are tender and nicely colored.
4. Prepare the yogurt sauce by mixing the yogurt, lemon juice, crushed garlic, salt, and pepper in a bowl. Add chopped parsley if desired.
5. Serve the roasted vegetable platter with the yogurt sauce on the side.
