A delicious vegetable lasagna with soy granules that adds a meaty flavor and texture. Packed with taste and nutritious ingredients.

Serving Size: 4-6 servings
Ingredients:
- 250 g soy granules
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 2 carrots, grated
- 400 g crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper
- 9-12 lasagna sheets
- 400 g ricotta cheese
- 200 g mozzarella cheese, grated
- 50 g Parmesan cheese, grated
- 2 tbsp olive oil
Instructions:
1. Heat olive oil in a large pan and sauté the onion and garlic until soft.
2. Add the soy granules and cook for a few minutes. Add the bell pepper and carrots, continuing to cook until the vegetables are soft.
3. Pour in the crushed tomatoes and tomato paste. Season with oregano, basil, salt, and black pepper. Let simmer on low heat for about 10 minutes.
4. Preheat the oven to 180°C (350°F).
5. Grease a baking dish. Place a layer of lasagna sheets at the bottom, followed by a layer of the soy mixture and a spoonful of ricotta. Repeat the layers until all ingredients are used, finishing with lasagna sheets and ricotta on top.
6. Sprinkle grated mozzarella and Parmesan cheese on top.
7. Bake in the oven for about 30-35 minutes, until the cheese is golden brown.
8. Let it rest for about 10 minutes before serving.
