A delicious and nutritious vegetable casserole that combines various flavors and colors, perfect as a side dish or main course. Preparation time is about 1 hour, serving size is 4-6.
Ingredients:
- ½ broccoli
- ½ cauliflower
- 2 green apples
- 2 yellow bell peppers
- 1 leek
- 2 garlic cloves
- 1 tbsp canola oil
- 1 cup sour cream
- A pinch of salt
- 1 tbsp herb pesto
- 1 egg
- A splash of milk
- 100 g grated Gouda cheese
Instructions:
1. Rinse, peel, and chop the broccoli, cauliflower, and apples.
2. Rinse the yellow bell peppers, halve, and remove the seeds. Place the peppers in a baking dish and bake in a preheated oven at 200°C (390°F) for 15 minutes.
3. Chop the leek and garlic. Sauté them in a pan with canola oil.
4. Add the apple slices to the pan and sauté for a while.
5. Remove the bell peppers from the oven and add them to the other vegetables. Season with salt and black pepper.
6. In a bowl, mix sour cream, salt, herb pesto, egg, and milk together. Add the mixture to the vegetables.
7. Grate the Gouda cheese and sprinkle it on top.
8. Bake in the oven at 200°C (390°F) for about 30 minutes.
