A delicious and simple weeknight meal that everyone will enjoy. Preparation time: 30 minutes, Serving size: 4.
Ingredients:
- 300 g pasta (e.g. penne or fusilli)
- 400 g chicken breast
- 1 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 400 g crushed tomatoes
- 1 tsp dried oregano
- Salt and pepper to taste
- 50 g Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and set aside.
2. Peel and chop the onion and garlic. Slice the bell pepper into strips.
3. Heat olive oil in a pan and add the onion and garlic. Sauté until softened.
4. Add the chicken breast to the pan and cook until fully cooked. Season with salt and pepper.
5. Add the bell pepper to the pan and sauté for a few minutes.
6. Pour in the crushed tomatoes and add oregano. Let it simmer on low heat for about 5-10 minutes.
7. Mix the cooked pasta into the sauce and heat for a moment longer.
8. Serve in bowls topped with grated Parmesan cheese if desired.
