A refreshing and colorful salad that adds more vegetables and flavor to your Christmas table.

Serving Size: 6-8 servings

Ingredients:

- 1 large iceberg lettuce
- 2 cooked and diced beetroots
- 1 cucumber, sliced
- 1 bell pepper, diced (red or yellow)
- 1 cup cherry tomatoes, halved
- 1 cup peas, fresh or frozen
- 1/2 cup red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste

Instructions:

1. Rinse and tear the iceberg lettuce into a bowl.
2. Top the lettuce with the diced beetroots, sliced cucumber, diced bell pepper, halved cherry tomatoes, peas, and red onion.
3. Crumble feta cheese over the salad.
4. Make the dressing by mixing olive oil, balsamic vinegar, salt, and pepper together.
5. Pour the dressing over the salad and gently toss to combine.
6. Serve immediately or let it marinate in the refrigerator for about 15 minutes before serving.
