Refreshing Summer Cake (Raikas kesäkakku)

Preparation Time: 20 minutes (plus 4 hours chilling)
Serving Size: 8 servings
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 400 g cream cheese
- 200 g quark
- 1 dl sugar
- 2 tsp vanilla sugar
- Juice of 2 limes
- 1 dl cream
- 3 gelatin sheets
- 200 g fresh berries (e.g., strawberries and blueberries)
Instructions:
1. Crush the digestive biscuits and mix them with melted butter. Press the mixture firmly into the bottom of a springform pan.
2. In a bowl, whisk together the cream cheese, quark, sugar, vanilla sugar, and lime juice until smooth.
3. Soak the gelatin sheets in cold water for about 5 minutes. Heat a small amount of water in a saucepan and dissolve the gelatin in it. Stir the gelatin into the cream cheese mixture.
4. Whip the cream and gently fold it into the cream cheese mixture.
5. Pour the filling over the biscuit base and smooth the surface. Allow the cake to set in the refrigerator for at least 4 hours.
6. Before serving, decorate the cake with fresh berries.
