A refreshing and moist gluten-free cake that holds its shape well. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 3 dl almond flour
- 1 dl coconut flour
- 1 dl sugar
- 1 dl honey
- 4 eggs
- 1 dl milk (or plant-based alternative)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1 dl melted butter or coconut oil
- 2 dl berries (e.g., blueberries or raspberries)
Instructions:
1. Preheat the oven to 175°C (350°F) and grease a cake pan.
2. In a large bowl, mix together almond flour, coconut flour, sugar, baking powder, and salt.
3. Add eggs, honey, milk, vanilla extract, and melted butter. Mix until smooth.
4. Gently fold in the berries.
5. Pour the batter into the prepared cake pan and smooth the top.
6. Bake in the oven for about 30-40 minutes, until the cake is golden brown and cooked through.
7. Allow the cake to cool before serving.
