A delightful winter-themed cake perfect for birthdays, filled with whipped cream and fruit puree, and decorated with melted white chocolate. Preparation Time: 3-4 hours (including cooling)
Serving Size: 12-14 servings
Ingredients:
- Cake Base:
- 8 large eggs
- 1 high 20 cm springform pan
- Filling:
- 8 dl heavy cream
- 0.75 dl sugar
- 1 can (200 g) caramel cream cheese
- 1 large jar of canned peaches
- 2 jars of strawberry puree
- ½ bar of grated white chocolate
- Frosting:
- 1-2 cans of Flora Whip
- Food coloring (about 1 dl)
- Melted white chocolate (for decoration)
- Snow Star:
- Melted white chocolate
- Sugar pearls
- Coconut flakes
Instructions:
1. Prepare the cake base: Bake an 8-egg cake in a high springform pan. Allow it to cool and then slice it into five layers.
2. Make the filling: Whip the heavy cream with sugar until stiff peaks form. Fold in the caramel cream cheese and grated white chocolate. Puree the peaches and strawberries.
3. Assemble the cake: Place the first layer of cake on a serving plate and surround it with the springform pan ring. Moisten the layer with the juice from the canned peaches and alternate adding the fillings (peach and strawberry puree). Cover with plastic wrap and chill.
4. Create the snow star: Draw the shape of a snow star on baking paper, oil it, and place it on a tray. Melt the chocolate and pipe the snow star shape onto the baking paper. Add sugar pearls and chill to set.
5. Decorate the cake: Whip the Flora Whip until stiff and add food coloring. Spread the whipped cream over the top and sides of the cake. Sprinkle with coconut flakes. Carefully place the snow star on top of the cake.
6. Store the cake in a cool place until serving.
