Ingredients:
- 1 package of dates - 2 dl coffee
- 2 dl water
- 3 ripe bananas
- 1 dl Greek yogurt
- 2 eggs
- 3 dl almond flour
- 1 dl potato flour
- 0.5 dl cocoa powder
- 2 tsp baking soda
- 1 tsp cinnamon
Instructions:
1. Chop the dates and place them in a saucepan. Add the coffee and water. Cook until the dates are softened and the mixture is smooth. Let it cool slightly.2. Peel the bananas and mash them with a fork. Add the banana puree, yogurt, and eggs to the date mixture.
3. In a separate bowl, mix the dry ingredients (almond flour, potato flour, cocoa powder, baking soda, and cinnamon) together and add to the saucepan. Stir until the batter is smooth.
4. Pour the batter into a greased cake pan.
5. Bake in a preheated oven at 180°C (350°F) for 30-50 minutes, depending on the size of the pan.
6. Allow the cake to cool before serving. It stores well in the refrigerator.
