Ingredients:
- 200 g butter
- 200 g sugar
- 4 eggs
- 250 g all-purpose flour
- 2 tsp baking powder
- 100 ml milk
- 250 g mascarpone cheese
- 200 ml heavy cream
- 2 tbsp powdered sugar
- 300 g sweet summer berries (e.g., strawberries, blueberries, raspberries)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Cream the butter and sugar together until fluffy. Add the eggs one at a time, mixing well after each addition.
3. In a separate bowl, mix the flour and baking powder together. Gradually add this dry mixture to the batter, alternating with the milk, and mix until smooth.
4. Pour the batter into the prepared cake pan and bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let it cool.
5. In a bowl, whip the mascarpone cheese and heavy cream together until light and fluffy. Add the powdered sugar and mix well.
6. Once the cake has cooled, slice it in half horizontally and fill with the mascarpone cream. Place the top layer back on.
7. Decorate the cake with sweet summer berries before serving. Enjoy!
