Ingredients:
- 2 fennels
- 3 oranges
- 1 ½ cups almonds
- A handful of arugula
- ½ bunch of mint
- Salt and black pepper to taste
- Light balsamic vinegar
- Good quality olive oil
Instructions:
1. Rinse the fennels and remove the stems.
2. Slice the fennels in half and cut them into thin slices using a knife or a mandoline.
3. Peel the oranges with a knife and slice them into rounds.
4. Toast the almonds in a dry hot pan until golden, then chop them roughly.
5. In a salad bowl, combine the fennels, oranges, almonds, arugula, and mint leaves.
6. Season the salad with salt and black pepper.
7. Drizzle with light balsamic vinegar and good quality olive oil, then toss gently to combine.
