Ingredients:
- 2 dl rice
- 1 dl lentils
- 1 dl corn
- 1 carrot, diced
- 1 dl peas
- 1 bell pepper, diced
- 4 dl vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Rinse the rice and lentils under cold water.
3. In a baking dish, combine the rice, lentils, corn, diced carrot, peas, and diced bell pepper.
4. Pour the vegetable broth and olive oil over the mixture. Season with salt and pepper.
5. Cover the dish with aluminum foil and bake in the oven for about 30-40 minutes, until the rice and lentils are cooked through.
6. Remove the dish from the oven, garnish with fresh herbs, and serve warm.
