Ingredients

- 100 ml oil
- 5 cloves garlic
- Salt to taste
- 2 tablespoons red wine or red wine vinegar
- 1 kg lamb rack
- 1 onion
- 2 tablespoons liquid honey
- Herbs to taste (e.g., rosemary, thyme)

Instructions

1. Prepare the marinade by mixing the oil, crushed garlic, salt, red wine or vinegar, honey, and herbs in a bowl.
2. Add the lamb rack to the marinade, ensuring the meat is well coated. Cover the dish and refrigerate overnight.
3. Remove the marinated lamb from the refrigerator and let it sit at room temperature for about two hours before cooking.
4. Preheat the oven to 200°C (392°F).
5. Heat some oil in a skillet and sear the lamb rack until the surface is beautifully browned.
6. Transfer the meat to foil, wrap it tightly, and place it in the oven for about 10-12 minutes.
7. Allow the meat to rest for a moment before serving.
