A quick and tasty pasta dish that combines fresh tomatoes, mozzarella cheese, and basil. Perfect for a weeknight dinner or summer gatherings. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 250 g cherry tomatoes
- 200 g mozzarella cheese
- 2 cloves garlic
- 3 tbsp olive oil
- 100 ml fresh basil
- Salt to taste
- Black pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little pasta cooking water.
2. Rinse the cherry tomatoes and cut them in half.
3. Peel and finely chop the garlic cloves.
4. Heat the olive oil in a large skillet over medium heat. Add the chopped garlic and sauté for about one minute until golden brown.
5. Add the cherry tomatoes to the skillet and cook for about 5 minutes until they soften.
6. Add the cooked pasta and mix well. If needed, add reserved pasta water to make the mixture juicier.
7. Crumble the mozzarella cheese into the pasta and mix until the cheese starts to melt.
8. Add the fresh basil, salt, and black pepper. Mix once more and serve warm.
