A refreshing and vibrant pasta dish inspired by the flavors of gazpacho, topped with creamy buffalo mozzarella.

Ingredients:
- 1 cucumber
- 1 bell pepper
- 2 ripe tomatoes
- 1 garlic clove
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt to taste
- Pepper to taste
- 300 g spaghetti
- 200 g buffalo mozzarella
- Fresh basil for garnish
Instructions:
1. Peel and chop the cucumber, bell pepper, and tomatoes into small pieces.
2. Finely mince the garlic clove.
3. In a bowl, combine the cucumber, bell pepper, tomatoes, garlic, olive oil, red wine vinegar, salt, and pepper. Mix well and let marinate for about 30 minutes.
4. Cook the spaghetti according to the package instructions until al dente, then drain.
5. Add the marinated vegetable mixture to the hot spaghetti and toss well to combine.
6. Crumble the buffalo mozzarella over the servings.
7. Garnish with fresh basil and serve immediately.
