A refreshing cold soup perfect for hot summer days.
Preparation time: 20 minutes
Serving size: 4 servings
Ingredients:
- 4 ripe tomatoes
- 1 cucumber
- 1 red onion
- 1 bell pepper (green or red)
- 2 garlic cloves
- 300 ml tomato juice
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- (optional: 100 g strawberries or watermelon)
Instructions:
1. Peel and chop the tomatoes, cucumber, red onion, bell pepper, and garlic.
2. Place all ingredients in a blender, add tomato juice, olive oil, and red wine vinegar.
3. Blend until smooth. If desired, add strawberries or watermelon for sweetness.
4. Season with salt and pepper and blend again.
5. Transfer the gazpacho to the refrigerator to chill for at least 30 minutes before serving.
6. Serve cold, garnished with fresh herbs if desired.
