A refreshing gazpacho that's the perfect summer dish, offering flavor and refreshment on hot days. Preparation time is about 20 minutes. Serves 4.Ingredients:
- 6 tomatoes- 1 red onion
- 1 cucumber
- 2 celery stalks
- 2 tablespoons fresh chopped parsley
- 2 tablespoons chopped chives
- 300 ml vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Rinse and chop the tomatoes, red onion, cucumber, and celery.2. Place all the chopped ingredients in a blender.
3. Add the vegetable broth, olive oil, salt, and pepper.
4. Blend the ingredients until smooth.
5. Taste and adjust seasoning if desired.
6. Chill the gazpacho in the refrigerator before serving.
7. Serve cold, preferably with fresh bread.
