A refreshing and chilled Spanish soup, perfect for hot summer days. Preparation Time: 20 minutes
Serving Size: 4
Ingredients:
- 1 bunch green onions - 4 tomatoes
- ½ cucumber
- 1 green bell pepper
- 1 crushed garlic clove
- 2 tablespoons parsley
- 1 can crushed tomatoes
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Water as needed
Instructions:
1. Finely chop the green onions, tomatoes, cucumber, and green bell pepper. 2. Combine all the ingredients in a large bowl.
3. Add the crushed garlic, parsley, crushed tomatoes, olive oil, red wine vinegar, salt, and pepper.
4. Mix the ingredients thoroughly, adding water as needed to reach your desired consistency.
5. Allow the soup to chill in the refrigerator for at least 1 hour before serving.
6. Serve cold and enjoy!
