A refreshing and flavorful cold soup perfect for summer days. Preparation time: 20 minutes
Serving size: 4
Ingredients:
- 1 mild red chili
- 500 g ripe tomatoes
- 1 tsp black pepper
- 3 spring onions
- 1 tbsp water
- ¾ tsp salt
- 3 tbsp lemon juice
- 1 clove garlic
- 150 g cucumber
- 1 red bell pepper
- Olive oil
Instructions:
1. Chop the rinsed spring onions.
2. Sauté the chopped onions in olive oil for a few minutes.
3. Add the chopped chili, tomatoes, cucumber, bell pepper, and garlic to the sautéed onions.
4. Season with salt and black pepper, then add lemon juice and water.
5. Blend all the ingredients until smooth in a blender.
6. Taste and adjust seasoning with more salt or lemon juice if needed.
7. Serve chilled with a drizzle of olive oil on top.
