A refreshing and fruity cold soup that blends the flavors of traditional gazpacho with the sweetness of mango. Perfect summer dish to cool you down on hot days. Preparation Time: 20 minutes

Ingredients:
- 2 ripe mangoes
- 4 ripe tomatoes
- 1 cucumber
- 1 red onion
- 1 clove garlic
- 2 tablespoons red wine vinegar
- 3 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
Instructions:
1. Peel and chop the mango, tomatoes, cucumber, red onion, and garlic.
2. Place all the ingredients into a blender.
3. Add the red wine vinegar, olive oil, salt, and black pepper.
4. Blend all the ingredients until smooth.
5. Taste and adjust seasoning with salt or pepper as needed.
6. Chill the gazpacho in the refrigerator for about 1-2 hours before serving.
7. Serve cold, garnished with fresh basil.
