Ingredients:

- 250 g pasta (e.g., spaghetti or penne)
- 200 g buffalo mozzarella
- 300 g cherry tomatoes
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 dl fresh basil, chopped
- Salt and black pepper to taste
- Parmesan cheese (optional)

Instructions:

1. Cook the pasta in salted water according to package instructions. Drain, reserving some cooking water.
2. Halve the cherry tomatoes.
3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about one minute.
4. Add the cherry tomatoes and cook until they soften, about 5-7 minutes.
5. Toss the cooked pasta with the tomato mixture. If needed, add a bit of reserved cooking water to prevent the pasta from drying out.
6. Tear the buffalo mozzarella into pieces and mix it into the pasta. Add chopped basil, salt, and pepper.
7. Serve immediately, and sprinkle with Parmesan cheese if desired.
