Penne alla Caprese

A heartier version of the classic Caprese salad perfect for a starter or lunch. A great choice for summer parties or picnics. Preparation Time: 30 minutes
Serving Size: 1 large serving or 2 small servings
Ingredients:
- 150 g cherry tomatoes- 100 g buffalo mozzarella
- Fresh basil
- Olive oil
- Salt
- Black pepper
- Balsamic vinegar
- (A pinch of sugar)
- 75 – 100 g penne pasta
Instructions:
1. Chop the cherry tomatoes and transfer them to a bowl. Season lightly with salt, black pepper, and a pinch of sugar if desired.2. Drizzle olive oil and a small splash of balsamic vinegar over the tomatoes. Mix and let marinate.
3. Cook the pasta in a large pot of well-salted water according to package instructions.
4. While the pasta is boiling, chop or tear the mozzarella into small pieces.
5. Drain the pasta and add it to the bowl with mozzarella, basil, and the marinated tomatoes.
6. If the tomatoes have released a lot of liquid, use a slotted spoon to mix, ensuring the pasta doesn’t become soggy.
7. Drizzle a bit more olive oil and season with salt and pepper to taste.
8. Serve immediately. If serving cold, quickly cool the pasta in cold water, mix with the other ingredients, and refrigerate to marinate. Add basil just before serving.
