A fresh and delicious pasta dish that combines the flavor of broccolini, the zest of lemon, and the creaminess of mozzarella. Preparation time is about 30 minutes, serving size is 4.
Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 200 g broccolini stems
- 2 garlic cloves, minced
- Juice and zest of 1 lemon
- 150 g mozzarella cheese, diced
- 3 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Add the broccolini to the pasta during the last 2-3 minutes of cooking.
2. Drain the pasta and broccolini, reserving some of the cooking water.
3. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until golden brown.
4. Add the cooked pasta and broccolini to the skillet. Toss to combine well.
5. Squeeze the lemon juice over the pasta and add the lemon zest. Season with salt and black pepper.
6. Add the mozzarella cheese and stir until it begins to melt. If needed, add a bit of the reserved cooking water for a creamier consistency.
7. Serve immediately, garnished with fresh basil if desired.
