Orzo Pasta with Pea Sauce and Broccolini

Ingredients:
- 2 green onion stalks or 1 yellow onion
- 1 clove garlic
- 1 tablespoon sun-dried tomato oil or olive oil
- 250 g orzo pasta
- 6-7 dl vegetable broth
- 400 g frozen peas
- 1 bunch fresh basil
- 200 g broccolini
- Salt and pepper to taste
Instructions:
1. Chop the green onions and garlic.
2. Heat the sun-dried tomato oil or olive oil in a large skillet over medium heat. Add the chopped onions and garlic, and sauté for about 2-3 minutes.
3. Add the orzo pasta to the skillet and stir well. Sauté for a few minutes until the pasta is slightly toasted.
4. Pour in the vegetable broth and stir. Bring to a boil, then reduce the heat. Let it simmer for about 8-10 minutes or until the orzo is cooked.
5. Add the frozen peas and stir. Cook for a few more minutes until the peas are thawed and warm.
6. Cut the broccolini into smaller pieces and add them to the pasta. Cook for another 2-3 minutes until the broccolini is tender but crisp.
7. Chop the fresh basil and stir it into the pasta. Season with salt and pepper to taste.
8. Serve immediately while hot and enjoy your delicious orzo pasta!
