A delicious and spicy orzo dish infused with harissa, vegetables, and topped with parmesan cheese. Preparation Time: 30 minutes

Ingredients:
- 250 g orzo pasta - 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 2 tbsp harissa paste
- 1 liter vegetable broth
- 100 g fresh spinach
- 50 g parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Peel and chop the onion and garlic. Dice the red bell pepper. 2. Heat olive oil in a large pot and add the onion and garlic. Sauté until soft.
3. Add the diced bell pepper and continue to cook for a few minutes.
4. Stir in the orzo pasta and harissa paste, mixing well.
5. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 10-12 minutes, until the pasta is al dente.
6. Add the fresh spinach and stir until wilted.
7. Remove the pot from heat and mix in the grated parmesan cheese. Season with salt and pepper to taste.
8. Serve warm and enjoy!
