Ingredients:

- 1 kg mussels
- 200 g chorizo, diced
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 onion, finely chopped
- 100 ml white wine
- 2 tablespoons harissa paste
- Juice of 1 lemon
- Fresh parsley, chopped
- Salt and black pepper to taste

Instructions:

1. Rinse the mussels under running water and discard any that are opened.
2. Heat the olive oil in a large pot over medium heat. Add the chorizo and cook until golden brown.
3. Add the chopped onion and minced garlic, sautéing until softened.
4. Pour in the white wine and let it simmer for a few minutes.
5. Stir in the harissa paste and lemon juice, mixing well.
6. Add the mussels to the pot and cover with a lid. Cook for about 5-7 minutes until the mussels have opened.
7. Season with salt and black pepper. Sprinkle fresh parsley on top before serving.
