Ingredients:
- 500 g sweet potatoes - 1 onion
- 2 garlic cloves
- 1 tablespoon harissa paste
- 1 liter vegetable broth
- 200 ml coconut milk
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh coriander (optional for garnish)
Instructions:
1. Peel and chop the sweet potatoes, onion, and garlic. 2. Heat olive oil in a pot and sauté the onion and garlic until soft.
3. Add the sweet potato cubes and harissa paste, mixing well.
4. Pour in the vegetable broth and bring to a boil. Simmer for about 15-20 minutes, until the sweet potatoes are tender.
5. Blend the soup with an immersion blender or in a countertop blender until smooth.
6. Stir in the coconut milk and heat the soup gently. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh coriander if desired.
