Broccoli and Fridge Cleanout Pasta

A delicious pasta dish that makes great use of leftover vegetables, especially broccoli. Quick and easy to prepare, perfect for a weeknight dinner! Preparation Time: 30 minutes
Serving Size: 4
Ingredients:
- 250 g pasta (e.g., penne or fusilli) - 1 bunch of broccoli, chopped
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 100 ml cream (or plant-based cream)
- 50 g Parmesan cheese (or vegan alternative), grated
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil (or other herbs) for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little pasta water. 2. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until soft.
3. Add the minced garlic and diced bell pepper. Cook for a few minutes until the pepper softens.
4. Add the chopped broccoli and sauté for about 5 minutes until the broccoli is tender but still crisp.
5. Pour in the cream and stir well. Let it simmer on low heat for a few minutes.
6. Add the cooked pasta and mix in. If the mixture seems dry, add a bit of the reserved pasta water.
7. Season with salt and pepper. Stir in the grated Parmesan cheese until it melts.
8. Serve warm, garnished with fresh herbs.
