These tasty vegetable patties are a perfect side dish or main course and are easy to prepare. Preparation time: 30 minutes. Serves: 5.Ingredients:
- 1 cup cooked chickpeas (canned or boiled)- ½ cup oats
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- ¼ cup fresh herbs (such as parsley or basil), chopped
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika powder
- 1 tbsp olive oil for frying
Instructions:
1. Mash the chickpeas in a bowl with a fork or blender until fairly smooth.2. Add oats, chopped onion, crushed garlic, grated carrot, and herbs to the mixture. Mix well.
3. Season with salt, black pepper, and paprika powder. Stir until you have a smooth dough.
4. Shape the dough into patties.
5. Heat olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until they are beautifully golden brown.
6. Serve warm with a salad or dipping sauce.
