Kanapoika Vegetable Soup with Ginger and Fresh Herbs

A delicious soup that combines chicken, vegetables, and Asian flavors with ginger and fresh herbs. An excellent option for a light meal!Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g chicken breast fillet
- 1 onion
- 2 carrots
- 1 bell pepper
- 1 zucchini
- 1 chili
- 2 tbsp fresh ginger
- 1 l vegetable broth
- 2 tbsp oil
- Salt and pepper to taste
- Fresh herbs (such as coriander or basil) for garnish
Instructions:
1. Clean and chop the vegetables. Remove seeds from the chili and slice it. Peel and grate the ginger.
2. Sauté the onion in oil over medium heat until soft. Remove the onion and cook the sliced chicken until golden brown.
3. Add all prepared ingredients, including the vegetable broth, to the pot. Cook the soup for about five minutes.
4. Check the flavor and add salt and pepper if needed. Garnish with fresh herbs before serving.
