A traditional Finnish fermented beverage inspired by the history of Kakola prison. This recipe takes 1-2 weeks to prepare, but the flavor improves over time.

Ingredients:

- 5 liters of water
- 1 kg sugar
- 500 g dried fruits (such as raisins or apricots)
- 1 packet of yeast (approximately 11 g)
- Juice of 1 lemon
- Spices to taste (such as cinnamon or ginger)

Instructions:

1. Boil the water in a pot and dissolve the sugar completely.
2. Add the dried fruits and let the mixture cool to room temperature.
3. Once cooled, add the yeast and lemon juice. Mix well.
4. Pour the mixture into a clean container, cover with a lid or cloth, and let it ferment in a dark place for 1-2 weeks.
5. Check the flavor and carefully transfer the finished kilju into bottles, avoiding sediment.
6. Allow it to mature for a few more days before enjoying.
