A delicious and creamy pasta dish with mushrooms and cherry tomatoes, inspired by Kaskis cuisine. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., tagliatelle)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 red onion, chopped
- 150 g fresh mushrooms, sliced
- 200 g cherry tomatoes, halved
- 100 ml cream
- 50 g Parmesan cheese, grated
- Fresh basil, chopped
- Salt and black pepper to taste
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a bit of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add garlic and red onion, sautéing until soft.
3. Add sliced mushrooms to the skillet and cook until golden brown.
4. Stir in cherry tomatoes and cook for a few more minutes until they soften.
5. Pour the cream into the skillet and mix well. Let it simmer on low heat for a few minutes.
6. Add the cooked pasta to the skillet and toss all the ingredients together. If needed, add a bit of the reserved cooking water to ensure the sauce coats the pasta well.
7. Stir in the grated Parmesan cheese and chopped basil. Season with salt and black pepper to taste.
8. Serve immediately and enjoy this Kaskis-style delight!
