Ingredients:
- 200 g quinoa - 400 ml vegetable broth
- 1 red onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, diced
- 200 g cherry tomatoes, halved
- 150 g spinach
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Rinse the quinoa under cold water and cook it in vegetable broth according to package instructions.2. Heat olive oil in a large skillet over medium heat. Add chopped red onion and crushed garlic, and sauté for about 3-4 minutes.
3. Add the diced bell pepper and zucchini, and cook for another 5-7 minutes until the vegetables are tender.
4. Stir in the halved cherry tomatoes and spinach. Cook until the spinach is wilted.
5. Mix the cooked quinoa into the vegetable mixture and season with balsamic vinegar, salt, and pepper.
6. Serve the dish garnished with fresh basil.
