Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- Spaghetti (200g)
- Olive oil (4 tablespoons)
- Garlic (4 cloves, thinly sliced)
- Red pepper flakes (1 teaspoon)
- Fresh parsley (a handful, chopped)
- Salt (to taste)
- Parmesan cheese (grated, for serving, optional)
Instructions:
1. Cook the spaghetti according to the package instructions in a pot of salted boiling water until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until it turns golden brown, being careful not to burn it.
3. Stir in the red pepper flakes and cook for an additional minute.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water.
5. Remove from heat and stir in the chopped parsley. Season with salt to taste.
6. Serve hot, topped with grated Parmesan cheese if desired.
