Serving Size: 4 sushi rolls
Ingredients:
- 1 cup sushi rice - 1 cup water
- 4 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 4 sheets nori
- 1 avocado
- 1 cucumber
- 3.5 ounces fresh salmon or tuna
- Soy sauce for serving
- Wasabi and pickled ginger (optional)
Instructions:
1. Rinse the sushi rice in cold water until the water runs clear. Cook the rice with water in a pot for about 20 minutes or until the water is absorbed. 2. Mix the rice vinegar, sugar, and salt in a small bowl. Heat gently until the sugar and salt dissolve. Stir this mixture into the cooked rice.
3. Allow the rice to cool to room temperature.
4. Slice the avocado, cucumber, and fish into thin strips.
5. Place a sheet of nori on a sushi mat or flat surface. Spread rice evenly over the nori, leaving about 2 cm at the top edge.
6. Add your desired fillings on top of the rice.
7. Roll the nori tightly using the mat to help. Seal the edge of the roll with a damp hand.
8. Cut the sushi rolls into slices and serve with soy sauce, wasabi, and pickled ginger.
