Spaghetti Aglio e Olio

A simple and classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown but not burnt, about 2-3 minutes.
3. Add the red chili flakes to the skillet and cook for an additional minute.
4. Add the drained spaghetti to the skillet and toss to coat with the garlic oil. If the pasta seems dry, gradually add some reserved pasta water until desired consistency is reached.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve hot, topped with grated Parmesan cheese if desired.
