Serving Size: 4 servings
Ingredients:
- 1 large green cabbage (about 1000 g)
- 200-250 g coarsely grated carrots
- 3 green onions
- 2 cloves of garlic
- 400 g lean ground beef
- 1 tablespoon canola oil
- 2 teaspoons salt
- 0.5 teaspoon ground black pepper
- 2 teaspoons dried marjoram (or 2 tablespoons fresh)
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 5 dl water
- 1 dl rice
- 1 beef bouillon cube
- 2 tablespoons syrup
Instructions:
1. Slice the cabbage into strips, dice the green onions with their tops, and slice the garlic.
2. Grate the carrots using a coarse grater.
3. Heat 1-2 tablespoons of canola oil in a large pot (minimum 5 liters) and sauté the green onions until soft.
4. Add the ground beef and brown it with the onions and garlic.
5. Season the mixture with salt, black pepper, marjoram, and thyme, and stir well.
6. Add the cabbage and water, mixing the ingredients together, and let it simmer for 5 minutes.
7. Once the cabbage has softened slightly, add the rice, crumble in the beef bouillon cube, and stir in the syrup.
8. Cook for another 5 minutes. Then, add the grated carrots, stir, and let it simmer for about 15 minutes.
9. Serve the cabbage stew with lingonberries or lingonberry jam.
