Serving Size: 4 patties
Ingredients:
- 1 cup cooked chickpeas (canned or boiled)
- 1/2 cup rolled oats
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- 1/4 cup fresh parsley, chopped
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg (or 1 tablespoon chia seeds + 3 tablespoons water for a vegan option)
- Oil for frying
Instructions:
1. Mash the chickpeas in a bowl using a fork or masher.
2. Add the rolled oats, onion, garlic, carrot, parsley, cumin, salt, and black pepper to the mixture. Combine well.
3. Add the egg or chia mixture and stir until a uniform dough forms.
4. Shape the mixture into four patties.
5. Heat oil in a pan over medium heat and fry the patties for about 4-5 minutes on each side until golden brown.
6. Serve warm, for example with a salad or bread.
